Ingredients

  • 120 grams All-purpose flour
  • 2 large Eggs
  • 240 milliliters Low sodium milk
  • 2 tablespoons Vegetable oil or unsalted butter
  • 0.5 teaspoons Ground black pepper (optional, for seasoning)

Directions

Step 1

Preheat your oven to 220°C (425°F) and place a standard 12-cup muffin tin in the oven to heat up.

Step 2

In a medium-sized mixing bowl, sift the all-purpose flour to remove lumps.

Step 3

Crack the eggs into the bowl with the flour and whisk until the mixture forms a thick, smooth batter.

Step 4

Slowly pour in the low sodium milk while whisking continuously to form a thin, lump-free batter. If desired, add a pinch of ground black pepper for flavor.

Step 5

Remove the preheated muffin tin from the oven carefully. Add about 1/2 teaspoon of vegetable oil or a small dot of unsalted butter into each muffin cup.

Step 6

Return the tin to the oven for 2-3 minutes to heat the oil or melt the butter until it's shimmering (but not smoking).

Step 7

Once the oil is hot, quickly and carefully pour the batter into the muffin cups, filling each about halfway. The hot oil will help the pudding rise.

Step 8

Immediately return the tin to the oven and bake for 15-20 minutes, or until the puddings are puffed up and golden brown. Do not open the oven during baking, as this can cause the puddings to collapse.

Step 9

Remove from the oven and serve immediately while hot. These low sodium Yorkshire puddings pair perfectly with a roast dinner or can be enjoyed on their own!
