Ingredients

  • 2 cups Plain low-sodium Greek yogurt
  • 2 tablespoons Honey (or maple syrup for a vegan option)
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries, diced
  • 0.5 cup Blueberries
  • 2 tablespoons Unsalted almonds, chopped
  • 2 tablespoons Unsweetened coconut flakes (optional)

Directions

Step 1

Line a rimmed baking sheet or a large, flat tray with parchment paper or a silicone baking mat.

Step 2

In a medium-sized mixing bowl, combine the plain low-sodium Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined.

Step 3

Pour the yogurt mixture onto the prepared baking sheet, spreading it evenly to about 1/4 inch thick using a spatula.

Step 4

Sprinkle the diced strawberries, blueberries, chopped unsalted almonds, and coconut flakes (if using) evenly over the yogurt layer. Gently press the toppings into the yogurt to ensure they adhere.

Step 5

Place the tray in the freezer and let it freeze for 3-4 hours or until the yogurt is completely firm.

Step 6

Once frozen, remove the tray from the freezer and carefully peel the parchment paper or silicone mat away from the yogurt bark.

Step 7

Break the bark into irregular pieces using your hands or a knife.

Step 8

Store the yogurt bark pieces in an airtight container or freezer bag in the freezer for up to 2 weeks. Serve frozen for a refreshing treat!
