Ingredients

  • 1 pound Ground turkey (99% lean, no added sodium)
  • 2 tablespoons Low sodium taco seasoning
  • 0.25 cup Water
  • 4 bags Individual bags of low sodium tortilla chips
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheddar cheese (low sodium or reduced fat)
  • 0.5 cup Plain Greek yogurt (unsalted, used as sour cream alternative)
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 0.25 cup Salsa (no salt added, optional)

Directions

Step 1

Heat a large skillet over medium heat and add the ground turkey. Cook, breaking up the meat with a wooden spoon, until fully cooked and no longer pink, about 8-10 minutes.

Step 2

Sprinkle the low sodium taco seasoning over the cooked turkey and add the water. Stir thoroughly to coat the meat evenly with the seasoning. Let it simmer for 2-3 minutes, then remove from heat.

Step 3

Carefully open the tops of the individual tortilla chip bags by cutting along the top of each bag with scissors. Gently crush the chips inside to create smaller, bite-sized pieces.

Step 4

Divide the cooked taco meat evenly among the four bags, layering it on top of the crushed chips.

Step 5

Top the meat in each bag with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of plain Greek yogurt. Add salsa and chopped cilantro, if desired.

Step 6

Hand each walking taco to your guests with a fork to enjoy straight from the bag!
