  • 0.5 cup Ube halaya (ube jam)
  • 1 Egg, large
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ube extract
  • 1 teaspoon Cornstarch
  • 2 tablespoons Milk (low sodium, dairy or non-dairy)
  • 1 drop Optional: Purple food coloring (to enhance color)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a medium bowl, whisk together the all-purpose flour, baking powder, and cornstarch. Set aside.

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and light brown sugar until light and fluffy using a hand or stand mixer (about 2-3 minutes).
