Directions

Step 1

Prepare an 8x8 inch square pan by lightly oiling it with a neutral oil (like vegetable oil) and lining it with parchment paper.

In a medium-sized saucepan, combine 2 cups of granulated sugar, 1 cup of water, and 1 tablespoon of lemon juice. Stir over medium heat until the sugar dissolves completely.

Increase heat to high and bring the sugar mixture to a boil, without stirring, until it reaches 240°F (soft-ball stage) on a candy thermometer. Remove from heat once the temperature is reached.

In another small saucepan, combine 1 cup of cornstarch and 2.5 cups of water. Whisk thoroughly to remove any lumps.
