Ingredients

  • 60 grams Unsalted butter
  • 180 grams Granulated sugar
  • 60 grams All-purpose flour
  • 350 ml Low-fat milk
  • 3 large Eggs
  • 1 teaspoon Lemon zest
  • 0.5 teaspoons Ground cinnamon (optional for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 12-cup muffin tin with unsalted butter or line with paper muffin cups.

Step 2

Melt the unsalted butter in a small saucepan over low heat or in the microwave. Set aside to cool slightly.

Step 3

In a mixing bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly frothy.

Gradually add the melted butter to the egg and sugar mixture while whisking continuously.

Sift the all-purpose flour into the bowl, and gently fold it into the wet mixture until there are no lumps.

Slowly pour in the low-fat milk, whisking continuously to ensure a smooth batter.

Add the lemon zest and stir to combine. The batter will be quite thin, which is normal for queijada.

Pour the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
