Ingredients

  • 250 grams All-purpose flour
  • 125 grams Unsalted butter (chilled and cubed)
  • 3 tablespoons Ice water
  • 200 grams Dried mixed fruits (e.g., raisins, currants, dried cranberries)
  • 100 milliliters Unsweetened apple juice
  • 1 medium Apple (peeled, cored, and finely diced)
  • 1 teaspoon Orange zest
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Vanilla extract
  • 2 tablespoons Maple syrup
  • 1 teaspoon Cornstarch
  • 2 teaspoons Water (for cornstarch slurry)
  • 1 egg Egg wash (1 egg beaten with 1 tablespoon water, optional for shine)

Directions

Step 1

In a large mixing bowl, combine the flour and chilled, cubed unsalted butter. Use a pastry cutter or your fingers to rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Step 2

Add the ice water, one tablespoon at a time, and gently mix until the dough comes together. Be careful not to overwork. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 3

In a medium saucepan over medium heat, combine the dried mixed fruits, unsweetened apple juice, diced apple, orange zest, ground cinnamon, ground nutmeg, and vanilla extract. Stir well.

Step 4

Add the maple syrup and mix thoroughly. Let the mixture simmer gently for 10-12 minutes until the dried fruits are plump and fragrant.

Step 5

In a small bowl, mix the cornstarch with water to create a slurry. Add this to the fruit mixture and stir until the filling thickens slightly. Remove the filling from heat and let cool to room temperature.

Step 6

Preheat your oven to 190°C (375°F). Roll out the chilled pastry dough on a floured surface to about 3mm (1/8 inch) thickness.

Step 7

Cut out rounds of pastry to fit your pie tin(s). Line the tin(s) with the pastry and trim any excess, reserving the scraps for lattice or decorative topping.

Step 8

Fill each pastry shell with the cooled fruit filling, making sure not to overfill.

Step 9

Roll out the reserved pastry scraps and cut strips for a lattice top or use small cutters to create decorative shapes.

Step 10

Place the lattice or decorative shapes on top of the pies. If using, brush with the optional egg wash for added shine.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.

Step 12

Allow the mince pies to cool slightly before serving. Enjoy warm or at room temperature!
