Ingredients

  • 4 cups Whole milk
  • 1 cup Heavy cream
  • 0.75 cup Granulated sugar
  • 2 tablespoons Unsalted pistachios (finely chopped)
  • 2 tablespoons Unsalted almonds (finely chopped)
  • 4 pieces Cardamom pods
  • 0.25 teaspoon Saffron strands
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

In a heavy-bottomed saucepan, pour the whole milk and bring it to a gentle boil over medium heat.

Step 2

Reduce the heat to low and let the milk simmer while stirring frequently to prevent it from sticking to the bottom. Continue simmering until the milk reduces to about half its original volume. This should take approximately 25-30 minutes.

While the milk is reducing, crush the cardamom pods to release their aroma.

Once the milk is reduced, stir in the heavy cream and granulated sugar. Continue to cook and stir for another 5 minutes until the sugar completely dissolves.

Dissolve the cornstarch in the water to form a slurry, ensuring there are no lumps.

Add the cornstarch slurry to the milk mixture and stir constantly for 3-4 minutes until the mixture thickens slightly.
