  • 2 cups Besan (Chickpea Flour)
  • 0.5 cup Ghee (Clarified Butter)
  • 1 cup Powdered Jaggery (or Coconut Sugar for variation)
  • 0.5 teaspoon Cardamom Powder
  • 2 tablespoons Sliced Almonds (optional, for garnish)
  • 2 tablespoons Raisins (optional)

Directions

Step 1

Heat a heavy-bottomed pan on low-medium flame and add the ghee.

Step 2

Once the ghee has melted, add the besan (chickpea flour) and stir well to combine.

Step 3

Roast the besan in the ghee, stirring continuously to ensure it does not burn. This step takes about 15-18 minutes. The besan should turn golden brown and release a nutty aroma.

Step 4

Reduce the heat to low and add the powdered jaggery to the roasted besan. Mix well until the jaggery is evenly distributed and melted. Stir continuously to avoid clumps.

Step 5

Add the cardamom powder and mix thoroughly to enhance the flavor.

Remove the pan from heat and let the mixture cool slightly until it is warm but not hot to the touch (about 5-7 minutes).
