Ingredients

  • 2 large Eggs
  • 1 small, finely sliced Shallot
  • 1 clove, minced Garlic
  • 1 teaspoon Low sodium soy sauce
  • 1 teaspoon Fresh lime juice
  • 1 small, thinly sliced Red chili (optional)
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Cooking oil (vegetable or coconut oil)
  • 1 tablespoon, chopped Fresh cilantro or parsley (optional)

Directions

Step 1

Heat 1 tablespoon of cooking oil in a nonstick frying pan over medium heat.

Step 2

Carefully crack one egg into a bowl, ensuring the yolk remains intact, and slide the egg into the hot pan. Repeat for the second egg.

Step 3

Fry the eggs until the whites are fully set but the yolks are still runny (or to your preferred doneness), about 2-3 minutes. Remove the eggs from the pan and set aside.

Step 4

Reduce the heat to low, and into the same pan, add the remaining 1 tablespoon of cooking oil.

Step 5

Add the sliced shallot and minced garlic to the pan. Sauté until fragrant and lightly golden, about 2-3 minutes.

Step 6

Optional: Stir in the sliced red chili for a bit of heat, cooking for an additional 30 seconds.

Step 7

Add the low sodium soy sauce, fresh lime juice, and ground black pepper to the pan, stirring to combine. Let the sauce gently simmer for 1 minute to meld the flavors.

Step 8

Pour the aromatic sauce mixture over the fried eggs.

Step 9

Garnish with chopped fresh cilantro or parsley, if desired, and serve immediately with steamed rice for a complete meal.
