Ingredients

  • 1 cup All-purpose flour
  • 1 cup Low-sodium dashi stock
  • 2 large Eggs
  • 1 cup Cooked octopus, diced
  • 2 tablespoons Green onions, finely chopped
  • 2 teaspoons Pickled ginger (optional, low-sodium or rinsed to reduce salt)
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Low-sodium mayonnaise
  • 1 tablespoon Bonito flakes (optional, use sparingly for reduced sodium)
  • 1 teaspoon Nori (seaweed), finely shredded

Directions

Step 1

In a mixing bowl, combine the all-purpose flour, low-sodium dashi stock, and eggs. Whisk until the batter is smooth and free of lumps.

Step 2

Preheat a Takoyaki pan over medium heat and brush each well with a small amount of vegetable oil.

Step 3

Pour the batter into each well, filling them about 3/4 of the way.

Step 4

Add a small piece of diced octopus, a pinch of green onions, and a small amount of pickled ginger (if using) into the center of each well.

Step 5

Top off each well with a bit more batter to cover the fillings completely.

Step 6

Allow the batter to cook for about 2-3 minutes until the edges begin to set. Use a skewer or chopstick to gently rotate each ball 90 degrees, allowing the uncooked batter to pour out and form a round shape. Continue turning until the Takoyaki balls are golden brown and evenly cooked on all sides.

Step 7

Once the Takoyaki balls are cooked through and crispy on the outside, transfer them to a serving plate.

Step 8

Drizzle with low-sodium mayonnaise, sprinkle with bonito flakes and shredded nori, and serve warm. Enjoy!
