Ingredients

  • 2 cups Raw mixed nuts (almonds, pecans, walnuts, or your choice)
  • 3 tablespoons Maple syrup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Paprika (smoked or sweet)
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Water
  • 1 tablespoon Unsalted butter or vegan butter

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the raw mixed nuts and set aside.

Step 3

In a small saucepan, add maple syrup, brown sugar, cinnamon, cayenne pepper, paprika, water, and butter. Heat over medium-low heat, stirring constantly, until the sugar dissolves and the mixture is smooth, about 2-3 minutes.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract.

Step 5

Pour the warm syrup mixture over the nuts in the mixing bowl, and stir well to ensure the nuts are evenly coated.

Step 6

Spread the coated nuts in a single layer on the prepared baking sheet, ensuring none overlap to promote even cooking.

Step 7

Bake in the preheated oven for 10-12 minutes, stirring halfway through to prevent burning and ensure the nuts are evenly caramelized.

Step 8

Remove the nuts from the oven and let them cool completely on the baking sheet. The coating will harden as it cools, creating a crunchy texture.

Step 9

Once fully cooled, transfer the nuts to an airtight container for storage. They will keep fresh for up to 2 weeks at room temperature.
