Ingredients

  • 1 cup Pineapple juice (unsweetened)
  • 3 tablespoons Apple cider vinegar
  • 3 tablespoons Honey (or maple syrup for a vegan option)
  • 2 tablespoons Low sodium ketchup
  • 1 tablespoon Low sodium soy sauce (or coconut aminos for soy-free)
  • 2 teaspoons Cornstarch
  • 2 tablespoons Cold water
  • 0.25 teaspoon Ground ginger (optional)
  • 1 teaspoon Minced garlic (optional)

Directions

Step 1

In a small saucepan, combine pineapple juice, apple cider vinegar, honey (or maple syrup), low sodium ketchup, low sodium soy sauce (or coconut aminos), ground ginger (if using), and minced garlic (if using). Whisk together to combine.

Step 2

Place the saucepan over medium heat and bring the mixture to a gentle simmer while stirring occasionally.

Step 3

In a small bowl, mix cornstarch with cold water to create a slurry.

Step 4

Once the sauce begins to simmer, slowly add the cornstarch slurry to the saucepan while whisking constantly to prevent lumps.

Step 5

Continue to cook the sauce while stirring for 2-3 minutes, or until it thickens to your desired consistency.

Step 6

Remove the saucepan from heat and allow the sauce to cool slightly.

Step 7

Use immediately as a sauce for stir-fries, a dip, or a glaze, or transfer it to an airtight container and store in the refrigerator for up to 1 week.
