Ingredients

  • 1 cup Unsweetened almond milk
  • 0.5 cup Granulated erythritol or monk fruit sweetener
  • 4 tablespoons Butter (unsalted; can substitute with vegan butter for dairy-free version)
  • 1 teaspoon Pure vanilla extract
  • 0.125 teaspoon Sea salt (optional, for taste)
  • 0.25 teaspoon Xanthan gum

Directions

Step 1

In a medium non-stick saucepan, combine the unsweetened almond milk and granulated erythritol or monk fruit sweetener. Whisk well to dissolve the sweetener.

Step 2

Place the saucepan over medium heat and add the butter. Stir until the butter melts and the mixture begins to simmer gently. This should take about 3-4 minutes.

Step 3

Reduce the heat to low and simmer the mixture, stirring occasionally, for 8-10 minutes. The liquid should reduce slightly and begin to thicken.

Step 4

Sprinkle the xanthan gum evenly over the mixture and whisk vigorously to incorporate it without lumps. Continue cooking for another 2-3 minutes until the caramel reaches a smooth and thickened consistency.

Step 5

Remove the saucepan from heat and stir in the pure vanilla extract. If using sea salt, add it now and stir well.

Step 6

Allow the caramel to cool for 5-10 minutes in the saucepan. It will continue to thicken as it cools.

Step 7

Transfer the caramel to a glass jar or heatproof container. Store in the fridge for up to 7 days, and gently reheat before using if needed.
