Ingredients

  • 1 pound Ground pork
  • 0.5 cup Panko breadcrumbs (unsalted)
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 0.25 cup Onion, grated
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly with olive oil.

Step 2

In a large mixing bowl, combine the ground pork, panko breadcrumbs, egg, minced garlic, grated onion, low-sodium soy sauce, dried oregano, black pepper, and paprika.

Step 3

Mix the ingredients with clean hands or a spoon until just combined. Do not overmix to avoid tough meatballs.

Step 4

Using a tablespoon or small scoop, portion out the mixture and roll it into evenly sized balls, about 1 inch in diameter. Place them on the prepared baking sheet, leaving some space between each meatball.

Step 5

Brush or drizzle the meatballs lightly with olive oil to promote browning during baking.

Step 6

Transfer the baking sheet to the preheated oven and bake for 18-20 minutes, or until the meatballs are cooked through and golden brown. The internal temperature should reach 160°F (71°C) when measured with a meat thermometer.

Step 7

Remove the meatballs from the oven and let them rest for 2-3 minutes before serving.

Step 8

Garnish with chopped parsley, if desired, and serve warm as an appetizer, over whole-grain pasta, or with a side of roasted vegetables.
