Ingredients

  • 1 cup Warm water
  • 2.25 teaspoons Active dry yeast
  • 1 teaspoon Granulated sugar
  • 3 cups All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter (melted)
  • 0.75 cup Low-sodium ricotta cheese
  • 1 cup Spinach (chopped)
  • 0.5 cup Carrot (grated)
  • 1 clove Garlic (minced)
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Dried oregano
  • 2 tablespoons Milk (optional, for brushing)

Directions

Step 1

In a small bowl, combine the warm water, active dry yeast, and sugar. Stir gently and let sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine 2 1/2 cups of all-purpose flour with the olive oil and activated yeast mixture. Stir until a sticky dough begins to form.

Step 3

Turn the dough out onto a floured surface and knead for 5-7 minutes, gradually adding the remaining flour as needed, until the dough is smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl. Cover with a damp towel and let rise in a warm place for 1 hour or until doubled in size.

Step 5

While the dough rises, prepare the filling. In a medium mixing bowl, combine the low-sodium ricotta cheese, chopped spinach, grated carrot, minced garlic, black pepper, and dried oregano. Mix well and set aside.

Step 6

After the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a ball and flatten it into a small circle using your hands or a rolling pin.

Step 7

Place about 2 tablespoons of the prepared filling in the center of each circle. Bring the edges of the dough up and pinch them together to seal the filling inside.

Step 8

Shape the filled dough into rolls and place them seam-side down on a parchment-lined baking sheet. Cover with a damp towel and let rise for another 20 minutes.

Step 9

Preheat the oven to 375°F (190°C). If desired, brush the tops of the rolls with milk for a golden finish.

Step 10

Bake the rolls in the preheated oven for 20-22 minutes or until golden brown and cooked through.

Step 11

Remove from the oven and let the rolls cool slightly before serving. Enjoy!
