Ingredients

  • 1 cup Fresh strawberries
  • 1 sheet Low-sodium puff pastry sheets
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Cornstarch
  • 1 teaspoon Fresh lemon juice
  • 1 tablespoon Unsalted butter
  • 1 large Egg (beaten, for egg wash)
  • 1 tablespoon Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Wash and hull the strawberries, then cut them into small pieces. Place them in a mixing bowl.

Step 3

Add granulated sugar, cornstarch, and lemon juice to the strawberries. Mix gently to combine and set aside for 5 minutes.

Step 4

Roll out the low-sodium puff pastry sheet on a lightly floured surface. Cut it into four equal rectangles.

Step 5

Spoon a small amount of the strawberry mixture onto one half of each rectangle, leaving about 1/2 inch of space along the edges.

Step 6

Fold the other half of each rectangle over the filling to create a pocket. Press the edges firmly with a fork to seal.

Step 7

Brush the tops of the pastries with the beaten egg to create a golden finish.

Step 8

Use a small knife to make 2-3 slits on the top of each pastry to allow steam to escape during baking.

Step 9

Place the pastries on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.

Step 10

Remove the pastries from the oven and let them cool for 5-10 minutes. Optionally, dust with powdered sugar before serving.

Step 11

Serve warm or at room temperature and enjoy!
