Ingredients

  • 2 cups fresh strawberries (hulled)
  • 0.25 cup low-sodium cane sugar or granulated sugar
  • 1 tablespoon plain unsweetened gelatin powder
  • 2 tablespoons cold water
  • 1 cup heavy whipping cream (chilled)
  • 1 teaspoon vanilla extract
  • 4 units fresh strawberries (for garnish, optional)

Directions

Step 1

Place the hulled strawberries in a blender or food processor and puree until smooth. Measure out 1 and 1/2 cups of strawberry puree and set aside.

Step 2

In a small bowl, combine the gelatin powder and cold water. Let it sit for 5 minutes to bloom.

Step 3

Transfer the bloomed gelatin to a small saucepan and heat gently over low heat, stirring constantly, until the gelatin is fully dissolved. Remove from heat and set aside to cool slightly.
