  • 400 grams Water spinach (kangkong)

  • 1 tablespoon Vegetable or avocado oil
  • 1 Red chili (optional, for heat), finely sliced
  • 1 teaspoon Fresh lime juice
  • 0.25 teaspoon Fresh black pepper

Directions

Step 1

Wash the water spinach thoroughly under running water to remove any dirt or grit. Trim the tough stems and chop the leafy parts and tender stems into 3-inch pieces. Set aside.

Step 2

In a small bowl, prepare the sauce by mixing the low-sodium soy sauce, rice vinegar, sesame oil, and lime juice. Stir to combine and set aside.
