Ingredients

  • 455 g Beef (sirloin or flank steak)
  • 3 tbsp Low-sodium soy sauce
  • 1.5 tbsp Cornstarch
  • 1 tsp Rice vinegar (unsalted)
  • 2 tsp Sesame oil
  • 2 tbsp Vegetable oil
  • 3 cloves Garlic cloves, minced
  • 1 tsp Fresh ginger, minced
  • 6 stalks Green onions, sliced into 2-inch pieces
  • 1 medium Red bell pepper, sliced into thin strips
  • 0.25 tsp Ground black pepper
  • 2 cups Cooked brown rice (optional, for serving)

Directions

Step 1

Thinly slice the beef against the grain into bite-sized strips. Place the beef in a medium bowl.

Step 2

In the bowl with the beef, combine 2 tablespoons low-sodium soy sauce, cornstarch, rice vinegar, sesame oil, and ground black pepper. Mix well to coat and set aside to marinate for 15 minutes.

Step 3

While the beef is marinating, prepare your vegetables by slicing the green onions into 2-inch pieces and the red bell pepper into thin strips. Mince the garlic and ginger.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the beef in a single layer and stir-fry for 2-3 minutes until browned but not fully cooked through. Remove the beef from the skillet and set aside on a plate.

Step 5

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic, ginger, green onions, and red bell pepper. Stir-fry for 2-3 minutes until the vegetables soften slightly but maintain their crispness.

Step 6

Return the beef to the skillet along with the remaining 1 tablespoon of low-sodium soy sauce. Stir-fry for another 2-3 minutes until the beef is fully cooked and everything is evenly coated.

Step 7

Remove the skillet from heat and serve immediately. Optionally, serve over cooked brown rice for a complete meal.
