Ingredients

  • 6 cups (packed) Fresh leafy greens (kale, spinach, or Swiss chard)
  • 2 cloves Garlic (finely minced)
  • 1 whole Lemon (zested and juiced)
  • 2 teaspoons Olive oil (extra virgin)
  • 0.25 teaspoons Ground black pepper (optional)

Directions

Step 1

Wash the leafy greens thoroughly under cold running water to remove dirt and grit. Remove any tough stems and chop the greens into bite-sized pieces.

Step 2

Peel and finely mince the garlic cloves. Set aside.

Step 3

Zest the lemon using a microplane or fine grater, being careful to avoid the bitter white pith. Juice the lemon and set both the zest and juice aside in separate bowls.

Step 4

In a large pot with a steamer basket, bring about 1 inch of water to a boil over medium-high heat.

Step 5

Place the chopped greens in the steamer basket, cover the pot with a tight-fitting lid, and steam the greens for 3-5 minutes, or until they are tender but still vibrant green.

Step 6

While the greens are steaming, heat the olive oil in a small skillet over low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.

Step 7

Once the greens are steamed, transfer them to a large serving bowl. Drizzle the garlic-infused olive oil over the greens, then add the lemon juice and zest. Toss gently to combine.

Step 8

Sprinkle with freshly ground black pepper, if desired, and serve immediately. Enjoy!
