Ingredients

  • 2 pieces (6-8 ounces each) Ribeye or sirloin steak
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 teaspoon Cracked black pepper
  • 3 tablespoons Red wine vinegar
  • 0.5 cup Fresh parsley (finely chopped)
  • 0.25 cup Fresh cilantro (finely chopped)
  • 1 teaspoon Fresh oregano (finely chopped, or 1 tsp dried)
  • 2 cloves Fresh garlic (minced)
  • 0.25 teaspoon Crushed red pepper flakes
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Water (to dilute sauce, if needed)

Directions

Step 1

Pat the steaks dry with a paper towel and rub both sides with 1 tablespoon of olive oil.

Step 2

In a small bowl, mix together garlic powder, onion powder, and black pepper. Generously coat the steaks with this seasoning blend on both sides.

Step 3

Heat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil to the pan.

Step 4

When the pan is hot, sear the steaks for 3-4 minutes on each side for medium-rare (cook longer for desired doneness). Remove steaks from the heat and let them rest for 5 minutes under a tent of foil to retain their juices.

Step 5

While the steaks rest, prepare the chimichurri sauce. In a small bowl, whisk together red wine vinegar, parsley, cilantro, oregano, minced garlic, crushed red pepper flakes, lemon juice, and the remaining olive oil.

Step 6

If the chimichurri sauce is too thick, add 1 tablespoon of water to thin it slightly. Taste and adjust seasoning with more black pepper if needed.

Step 7

Slice the rested steaks against the grain and serve with the chimichurri sauce drizzled on top or on the side.
