Ingredients

  • 10 ounces Fresh spinach
  • 2 large Eggs
  • 1 cup Plain breadcrumbs (low sodium)
  • 0.25 cup Grated Parmesan cheese (low sodium, optional)
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Wash the fresh spinach thoroughly, then blanch it in boiling water for 1 minute. Drain and immediately place it in ice water to stop the cooking process. Drain again and press out as much water as possible. Finely chop the spinach and set aside.

Step 3

In a large mixing bowl, beat the eggs. Add the chopped spinach, breadcrumbs, Parmesan cheese (if using), onion, garlic, oregano, basil, and black pepper. Mix everything together thoroughly.

Add the olive oil to the mixture and stir well to combine. The mixture should be moist but not overly wet.

Take small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the spinach balls onto the prepared baking sheet, leaving a little space between each one.
