  • 1 Small onion (finely chopped)
  • 1 Jalapeño (seeded and finely chopped)
  • 2 tbsp Tomato paste (no added salt)
  • 0.25 cup Water
  • 8 Corn tortillas
  • 1 cup Shredded lettuce
  • 0.5 cup Diced tomatoes
  • 1 Diced avocado
  • 0.25 cup Cilantro leaves
  • 2 Lime wedges

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Once the oil is hot, add the chopped onion and jalapeño. Sauté for 3-4 minutes until softened and fragrant.
