  • 1 cup Dry coconut slices
  • 1 cup Chickpea flour noodles (sev), unsalted
  • 10 leaves Curry leaves, fresh
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Cayenne pepper powder
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Amchur (dried mango) powder
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Oil (vegetable or peanut oil)

Directions

Step 1

Heat a large, wide non-stick pan over medium heat and add the oil.

Step 2

Once the oil is warm, add the curry leaves and dry coconut slices. Stir-fry for 1-2 minutes until the coconut starts to turn golden and the curry leaves become crispy.

Reduce the heat to low and stir in the turmeric powder, cayenne pepper powder, ground black pepper, amchur powder, and garlic powder. Toast the spices for 30 seconds to release their aroma.
