  • 2 tablespoons Olive oil

  • 4 cups Low sodium beef broth
  • 1 14.5-ounce can Canned diced tomatoes, no salt added
  • 2 tablespoons Tomato paste, no salt added
  • 1 tablespoon Worcestershire sauce, low sodium
  • 2 teaspoons Paprika
  • 0.5 teaspoons Cayenne pepper
  • 0.5 teaspoons Black pepper
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add half the beef stew meat and sear until browned on all sides, about 3-4 minutes per batch. Remove and repeat with the second batch, adding an additional tablespoon of olive oil if needed. Set browned beef aside.

Step 2

Reduce heat to medium and add diced onion to the same pot. Sauté for 3-4 minutes until softened, stirring occasionally. Add minced garlic and cook for another 1 minute until fragrant.

Step 3

Stir in sliced carrots, celery, and potatoes. Cook for 5 minutes, letting the vegetables begin to soften slightly.

Return the seared beef to the pot and pour in the low sodium beef broth, diced tomatoes (including liquid), and tomato paste. Add Worcestershire sauce, paprika, cayenne pepper, black pepper, and the bay leaf. Stir to combine.
