  • 1 pound beef chuck or brisket
  • 1 tablespoon vegetable oil
  • 6 cups low sodium beef broth

  • 3 garlic cloves, minced
  • 1 tablespoon red chili paste
  • 1 teaspoon crushed red pepper flakes
  • 8 ounces rice noodles (or other noodles of choice)
  • 2 cups bok choy, chopped
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 4 lime wedges
  • 1 teaspoon optional sesame oil (for garnish)

Directions

Step 1

Cut the beef into bite-sized pieces and trim off any excess fat.

Step 2

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the beef pieces and sear on all sides until browned, about 6-8 minutes. Remove the beef and set aside.

In the same pot, add the ginger and garlic, stirring constantly until fragrant, about 30 seconds.
