Ingredients

  • 12 oz Whole wheat spaghetti
  • 4 links Low-sodium chicken or turkey sausage
  • 2 tbsp Olive oil
  • 1 medium Onion, diced
  • 3 Garlic cloves, minced
  • 28 oz No-salt-added crushed tomatoes
  • 2 tbsp Tomato paste (no salt added)
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Black pepper
  • 0.25 cup Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil. Cook the whole wheat spaghetti according to package instructions, omitting any added salt. Drain and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides, about 6-8 minutes. Remove the sausages from the pan, let cool slightly, then slice into bite-sized pieces.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Add the no-salt-added crushed tomatoes and tomato paste to the skillet. Stir well to combine.
