Ingredients

  • 12 oz Spaghetti (low sodium or no added salt)
  • 2 tbsp Olive oil

  • 3 Garlic cloves, minced
  • 28 oz Canned no-salt-added diced tomatoes
  • 2 tbsp Tomato paste (no salt added)
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 0.5 tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, chopped
  • 5 Fresh basil leaves (optional for garnish)

Directions

Step 1

Bring a large pot of water to a boil. Cook the spaghetti according to the package instructions, but do not add any salt to the water. Reserve 1/2 cup of pasta water before draining and set the spaghetti aside.

Step 2

While the spaghetti cooks, heat the olive oil in a large skillet over medium heat.

Add the chopped onion to the skillet and sauté for 5-7 minutes until it becomes soft and translucent.

Add the minced garlic to the onions and cook for another 1-2 minutes, stirring frequently to prevent burning.
