  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Chili powder (low sodium)
  • 1 teaspoon Paprika
  • 2 tablespoons Tomato paste (no salt added)
  • 0.25 cup Water
  • 8 pieces Whole wheat or corn tortillas (6-inch, low sodium)
  • 2 cups Lettuce (shredded)
  • 1 cup Tomatoes (diced)
  • 1 medium Avocado (sliced)
  • 1 lime Lime wedges
  • 0.25 cup Fresh cilantro (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Once the oil is heated, add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for another minute until fragrant.
