Ingredients

  • 2 whole large globe artichokes
  • 1 whole lemon
  • 2 whole garlic cloves
  • 1 whole bay leaf
  • 15 pieces black peppercorns

Directions

Step 1

Rinse the artichokes under cold water to remove any dirt.

Step 2

Cut the lemon in half and rub one half over the cut edges of the artichokes to prevent browning.

Step 3

Trim about one inch from the top of the artichoke using a sharp knife.

Step 4

Using kitchen scissors, snip off the thorny tips from the remaining leaves.

Step 5

Cut the stems close to the base of each artichoke, allowing them to sit flat while cooking.

Step 6

In a large pot, add enough water to cover the artichokes, approximately 8 cups.

Step 7

Squeeze the juice from the lemon halves into the pot and drop in the lemon shells as well.

Step 8

Peel the garlic cloves, and add them whole to the pot along with the bay leaf and black peppercorns.

Step 9

Place the artichokes in the pot, making sure they are submerged. If they tend to float, weigh them down with a heat-resistant plate.

Step 10

Cover the pot and bring the water to a boil over high heat.

Step 11

Once boiling, reduce the heat to a simmer, and cook for 30 minutes or until the outer leaves can be easily pulled off.

Step 12

Remove the artichokes from the pot and allow them to cool slightly.

Step 13

Serve warm with your choice of low sodium dipping sauce or enjoy them plain.
