Ingredients

  • 2 pounds Beef chuck roast
  • 2 Large onions, sliced
  • 4 Garlic cloves, minced
  • 2 cups Low sodium beef broth
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Heat 1 tablespoon of olive oil in a large oven-safe pot over medium-high heat.

Step 3

Season the beef chuck roast with black pepper, dried thyme, and rosemary on all sides.

Step 4

Sear the beef in the hot oil until it's browned on all sides, about 4-5 minutes per side. Remove the beef from the pot and set it aside.

Add the remaining tablespoon of olive oil to the pot. Add the sliced onions and garlic, and sauté until the onions are caramelized and soft, about 8-10 minutes.
