Ingredients

  • 2 pounds Beef chuck roast
  • 2 tablespoons Olive oil
  • 2 cups Low sodium beef broth

  • 1 teaspoon Chili powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 0.5 cup Fresh cilantro, chopped
  • 12 Corn tortillas
  • 1 Lime, cut into wedges
  • 1 Avocado, sliced
  • 2 Roma tomato, diced

Directions

Step 1

Trim excess fat from the beef chuck roast.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side.

Transfer the beef to a slow cooker.

Add the low sodium beef broth, apple cider vinegar, minced garlic, chopped onion, ground cumin, chili powder, dried oregano, black pepper, and bay leaf into the slow cooker.
