  • 2 tablespoons unsalted butter
  • 0.5 cup low-fat milk
  • 0.5 teaspoon freshly ground black pepper (for potatoes)

Directions

Step 1

Preheat your oven to 400°F (200°C).

In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
