Ingredients

  • 100 grams Vermicelli
  • 2 tablespoons Ghee
  • 1 liter Full-fat milk
  • 100 grams Sugar
  • 4 pieces Cardamom pods, crushed
  • 10 pieces Cashew nuts
  • 2 tablespoons Raisins
  • 10 strands Saffron strands
  • 1 tablespoon Almonds, slivered
  • 1 tablespoon Pistachios, chopped

Directions

Step 1

Heat the ghee in a large pan over medium heat. Once melted, add the cashew nuts and raisins. Sauté until the cashew nuts turn golden brown and the raisins puff up. Remove them from the pan and set aside.

Step 2

In the same pan, add the vermicelli and roast it in the remaining ghee for about 5-6 minutes until it turns a light golden color. Stir continuously to avoid burning.

Step 3

Meanwhile, in a separate saucepan, bring the milk to a boil. Once boiled, reduce the heat and let it simmer.

Step 4

Pour the simmering milk over the roasted vermicelli in the pan. Stir well to combine. Cook on medium heat, stirring occasionally, until the vermicelli softens and the milk reduces slightly, for about 10-15 minutes.

Step 5

Add sugar to the pan and stir until it dissolves completely.

Step 6

Add the crushed cardamom and saffron strands to the mixture, stirring well to incorporate the flavors.

Step 7

Gently simmer for another 5 minutes, allowing the flavors to meld beautifully.

Step 8

Turn off the heat and garnish with the sautéed cashew nuts, raisins, slivered almonds, and chopped pistachios.

Step 9

Serve the payasam warm or chilled as desired.
