Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 large, chopped onion
  • 3 minced garlic cloves
  • 2 medium, diced carrots
  • 2 diced celery stalks
  • 2 cups low sodium beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • 1 cup frozen peas
  • 1 bay leaf

Directions

Step 1

Heat the olive oil in a large saucepan or Dutch oven over medium heat.

Step 2

Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for about 5 minutes, or until the onions are translucent and the vegetables have softened.

Step 3

Add the ground beef to the pot and cook, breaking it apart with a spoon, until it is browned all over. This should take about 7 minutes.

Step 4

Stir in the tomato paste, mixing it with the beef and vegetables. Cook for an additional 2 minutes to let the tomato paste caramelize slightly.

Step 5

Pour the low sodium beef broth into the pot and add the worcestershire sauce, dried thyme, dried oregano, freshly ground black pepper, and bay leaf.

Step 6

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it stew for about 20 minutes, stirring occasionally.

Step 7

Add the frozen peas and cook for an additional 5 minutes, until the peas are heated through.

Step 8

Remove the bay leaf before serving. Taste and adjust seasonings if necessary.

Step 9

Serve the stewed ground beef hot over rice, pasta, or mashed potatoes.
