Ingredients

  • 4 cups puffed rice
  • 0.5 cup unsalted peanuts
  • 2 tablespoons olive oil
  • 15 leaves curry leaves
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground black pepper
  • 0.25 cup unsalted sunflower seeds
  • 1 piece dried red chili
  • 0.5 teaspoon ginger powder
  • 0.5 teaspoon garlic powder
  • 1 tablespoon lemon juice

Directions

Step 1

Heat a large non-stick skillet over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the curry leaves and the dried red chili. Sauté for about 1 minute, until the curry leaves are crisp and the chili has darkened slightly.

Step 3

Add the unsalted peanuts and sunflower seeds to the skillet. Stir continuously for 3-4 minutes until they are lightly toasted.

Step 4

Reduce the heat to low and add ground turmeric, ginger powder, garlic powder, and ground black pepper. Stir constantly for 1 minute to combine and enhance the spices.

Step 5

Add the puffed rice to the skillet and gently mix to ensure it is evenly coated with the spice mixture.

Step 6

Continue to stir the mixture over low heat for 4-5 minutes, until the puffed rice is heated through and crisp.

Step 7

Remove the skillet from the heat and sprinkle lemon juice over the mixture. Toss to combine.

Step 8

Let the snack cool completely before serving to ensure maximum crunchiness.
