Ingredients

  • 500 grams Button mushrooms
  • 100 grams Rolled oats
  • 1 medium, finely chopped Red onion
  • 3 cloves, minced Garlic
  • 1 large Egg
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Ground flaxseed
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Lemon zest
  • 1 tablespoon Balsamic vinegar

Directions

Step 1

Clean the button mushrooms with a damp cloth and finely chop them.

Step 2

In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushrooms and cook for about 5-7 minutes until they are softened and any moisture has evaporated.

Once the mushrooms are cooked, transfer them to a mixing bowl and allow them to cool slightly.
