Ingredients

  • 1 pound Chicken breast
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 1 medium Red onion
  • 0.25 cup Low sodium soy sauce
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Dried oregano
  • 8 Wooden skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

Cut the chicken breast into 1-inch cubes and set aside.

Step 3

Deseed and cut the red bell pepper into 1-inch pieces.

Step 4

Slice the zucchini into 1/2-inch thick rounds.

Step 5

Cut the red onion into 1-inch pieces, separating the layers somewhat.

Step 6

Mince the garlic cloves finely.

Step 7

In a large mixing bowl, combine low sodium soy sauce, olive oil, minced garlic, lemon juice, ground black pepper, and dried oregano to make a marinade.

Step 8

Add the chicken cubes to the marinade and toss to coat. Let it marinate in the refrigerator for at least 15 minutes up to 2 hours for deeper flavor.

Step 9

Preheat the grill to medium-high heat.

Step 10

Thread the marinated chicken cubes, red bell pepper pieces, zucchini slices, and onion onto the skewers, alternating pieces.

Step 11

Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).

Step 12

Remove skewers from the grill and let them rest for a couple of minutes before serving.

Step 13

Serve warm, enjoy as is or with a side of whole grain rice or fresh salad.
