Ingredients

  • 15 oz canned chickpeas
  • 0.5 cup red onion
  • 0.5 cup carrot
  • 2 cloves garlic cloves
  • 0.25 cup fresh parsley
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 0.5 cup whole wheat breadcrumbs
  • 0.5 teaspoon ground black pepper
  • 1 egg

Directions

Step 1

Drain and rinse the canned chickpeas thoroughly in a colander to remove any excess sodium.

Step 2

In a food processor, add the chickpeas, chopped red onion, grated carrot, garlic cloves, and fresh parsley. Pulse until the mixture is blended but still has some texture.

Step 3

Add the ground cumin, ground coriander, lemon juice, and black pepper to the chickpea mixture. Pulse again to combine.

Step 4

Transfer the mixture to a large bowl and add the whole wheat breadcrumbs and egg. Mix until all ingredients are well combined and can be formed into patties.

Step 5

Form the mixture into 8 even-sized patties.

Step 6

In a large non-stick skillet, heat the olive oil over medium heat.

Step 7

Cook the chickpea patties for about 3-4 minutes on each side, or until they are golden brown and cooked through.

Step 8

Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

Step 9

Serve warm on whole grain buns, a salad, or on their own as a nutritious snack.
