Ingredients

  • 2 pounds Beef sirloin tips
  • 2 tablespoons Olive oil
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 2 cups Low sodium beef broth
  • 2 tablespoons Reduced sodium Worcestershire sauce
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 large Carrots, sliced
  • 8 ounces Mushrooms, sliced
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Cut beef sirloin tips into bite-sized pieces, approximately 1-inch cubes.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add beef and sear until browned on all sides, about 5-7 minutes. Transfer beef to a slow cooker.

Step 3

In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.

Step 4

Deglaze the skillet by adding 1/2 cup of beef broth. Stir to scrape up any brown bits from the bottom of the pan.

Pour the onion, garlic, and broth mixture over the beef tips in the slow cooker.
