Ingredients

  • 1 pound Lean beef flank steak
  • 2 cups Fresh spinach
  • 1 cup Low-sodium mozzarella cheese, shredded
  • 0.5 cup Low-sodium ricotta cheese
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Freshly ground black pepper
  • 1 teaspoon Dried Italian seasoning
  • 1 medium Red bell pepper, finely chopped
  • 1 teaspoon Lemon zest
  • 4 pieces Skewers or kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lay the flank steak on a flat surface and gently pound it to about 1/4-inch thickness for even cooking. Pat it dry with a paper towel.

Step 3

Season the beef with freshly ground black pepper and Italian seasoning. Set aside.

Step 4

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 5

Add the fresh spinach and bell pepper to the skillet, and sauté for 3-5 minutes, or until the spinach is wilted and the pepper softens. Remove from heat and allow to cool slightly.

Step 6

In a mixing bowl, combine the sautéed spinach mixture with ricotta cheese, mozzarella cheese, and lemon zest, stirring until well mixed.

Step 7

Spread the cheese and spinach mixture evenly over the seasoned side of the beef flank steak, leaving a small border around the edges.

Step 8

Carefully roll the steak tightly from one end to the other, making sure to keep the filling inside. Secure the roll with skewers or kitchen twine at 2-3 inch intervals to hold the shape.

Step 9

In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the beef roll on all sides until browned, about 2-3 minutes per side.

Step 10

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the beef reaches your desired level of doneness.

Step 11

Remove from oven, cover the skillet loosely with foil, and let the beef rest for 10 minutes before slicing.

Step 12

Cut the beef roll into slices and serve immediately, pairing with your choice of sides.
