Ingredients

  • 2 links Low sodium chicken sausage
  • 6 pieces Large eggs
  • 3 pieces Egg whites
  • 3 ounces Low sodium cheddar cheese, shredded
  • 1 cup Fresh spinach, chopped
  • 0.5 cup Red bell pepper, diced
  • 2 pieces Green onions, sliced
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Lightly grease a 12-cup muffin tin with olive oil or line with silicone muffin liners.

Step 3

Remove the casing from the chicken sausage and crumble it into a small skillet over medium heat. Cook for 5-7 minutes until browned, then set aside to cool slightly.

In a large mixing bowl, whisk together the eggs and egg whites until well combined.

Add the chopped spinach, diced red bell pepper, sliced green onions, black pepper, shredded cheddar cheese, and cooked sausage to the egg mixture. Stir until evenly distributed.
