Ingredients

  • 500 g Button mushrooms
  • 200 ml Coconut milk
  • 2 tbsp Peanut butter
  • 2 tbsp Low sodium soy sauce
  • 1 tbsp Fresh lime juice
  • 2 large Garlic cloves
  • 1 inch piece Ginger
  • 1 tbsp Brown sugar
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Chili powder
  • 2 tbsp Olive oil
  • 2 tbsp Fresh cilantro
  • 10 Wooden skewers

Directions

Step 1

Clean the button mushrooms by gently wiping them with a damp paper towel to remove any dirt. Trim the stems if necessary. Set aside.

Step 2

In a medium bowl, combine coconut milk, peanut butter, low sodium soy sauce, and fresh lime juice.

Step 3

Peel and finely mince the garlic cloves and ginger, then add them to the bowl.

Step 4

Stir in brown sugar, ground cumin, ground coriander, and chili powder until the marinade is well blended.
