Ingredients

  • 8 medium Shallots
  • 6 pieces Red Bird's Eye Chili
  • 2 stalks Lemongrass
  • 5 leaves Kaffir Lime Leaves
  • 2 cloves Garlic
  • 3 tablespoons Coconut Oil
  • 2 tablespoons Lime Juice
  • 2 tablespoons Fresh Coriander
  • 1 teaspoon Low Sodium Soy Sauce
  • 1 teaspoon Optional: Palm Sugar

Directions

Step 1

Peel and thinly slice the shallots into rings.

Step 2

Slice the red bird's eye chilies thinly. If you prefer a milder heat, deseed them before slicing.

Step 3

Remove the outer layer of the lemongrass stalks, then finely slice the tender white part only.

Step 4

Roll up the kaffir lime leaves and slice them into thin strips.

Step 5

Peel and finely mince the garlic cloves.
