Ingredients

  • 1 large head cauliflower
  • 2 tablespoons extra-virgin olive oil
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.25 cup tahini
  • 2 tablespoons lemon juice
  • 3 tablespoons water
  • 2 cloves garlic
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Wash and cut the cauliflower into florets.

Step 3

In a large bowl, toss the cauliflower florets with 2 tablespoons of extra-virgin olive oil, 0.5 teaspoon of ground black pepper, 1 teaspoon of ground cumin, 0.5 teaspoon of paprika, and 0.5 teaspoon of garlic powder until evenly coated.

Step 4

Spread the seasoned cauliflower in a single layer on the prepared baking sheet.

Step 5

Roast in the preheated oven for 25-30 minutes or until the cauliflower is tender and has developed a golden-brown color, flipping once halfway through.

Step 6

While the cauliflower is roasting, prepare the tahini sauce: In a small bowl, whisk together 0.25 cup of tahini, 2 tablespoons of lemon juice, 3 tablespoons of water, and 2 minced garlic cloves until smooth. Adjust the consistency with additional water if needed.

Step 7

Once the cauliflower is roasted, transfer to a serving platter and drizzle with the tahini sauce.

Step 8

Garnish with 2 tablespoons of chopped fresh parsley before serving.
