Ingredients

  • 1 cup Dried wakame seaweed
  • 1 medium Cucumber
  • 1 medium Carrot
  • 0.5 Red bell pepper
  • 2 stalks Green onions
  • 1 tablespoon Toasted sesame seeds
  • 2 tablespoons Lime juice
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Low sodium soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Honey
  • 1 teaspoon Fresh ginger

Directions

Step 1

Soak the dried wakame seaweed in a bowl of cold water for about 10 minutes, or until it expands and becomes tender. Drain and gently squeeze out excess water. Set aside.

Step 2

Peel and julienne the carrot into thin strips.

Step 3

Thinly slice the cucumber; if desired, remove seeds before slicing.

Deseed the red bell pepper and cut into thin strips.

Finely chop the green onions.
