Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 medium red bell pepper, sliced
  • 2 cups broccoli florets
  • 2 medium carrots, thinly sliced
  • 3 stalks green onions, chopped
  • 1 teaspoon sesame oil
  • 0.5 teaspoon ground black pepper

Directions

Step 1

In a medium bowl, combine the beef slices, low sodium soy sauce, and cornstarch. Mix well to ensure the beef is evenly coated. Set aside and let marinate for about 5 minutes.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef to the hot pan. Stir fry the beef, stirring frequently, until it is browned and cooked through, about 4-5 minutes. Remove the beef from the pan and set aside.

Step 3

In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.

Step 4

Add the sliced red bell pepper, broccoli florets, and sliced carrots to the pan. Stir fry the vegetables, occasionally stirring for about 4-5 minutes until they are tender-crisp.

Step 5

Return the cooked beef back to the pan. Add the chopped green onions, sesame oil, and ground black pepper. Stir well to combine all the ingredients and heat through, about 2 minutes more.

Step 6

Taste and adjust the seasoning if necessary, remembering the recipe is intended to be low sodium.

Step 7

Serve the stir-fry hot with a side of steamed rice or your preferred accompaniment.
