  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.5 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and ginger. Set aside.

Step 3

In a large bowl, whisk the melted butter and sugar together until well combined.

Step 4

Add the pumpkin puree and mix until smooth and thoroughly incorporated.

Step 5

Beat in the eggs one at a time, followed by the vanilla extract.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 8

Bake for 28-30 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove from the oven and allow to cool in the pan for about 10 minutes.

Step 10
