Ingredients

  • 3 medium potatoes
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 0.5 red bell pepper, finely diced
  • 3 cloves garlic, minced
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 2 tablespoons fresh cilantro, chopped
  • 4 low sodium tortillas
  • 1 avocado, sliced

Directions

Step 1

Peel and dice the potatoes into small cubes.

Step 2

Bring a medium pot of water to a boil. Add the diced potatoes and cook for about 10 minutes or until tender. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until it begins to soften.

Step 4

Add the red bell pepper and garlic to the skillet, and cook for another 2-3 minutes until the vegetables are fragrant and softened.

Step 5

Stir in the cooked potatoes, ground black pepper, ground cumin, and paprika. Toss everything together well and cook for an additional 5 minutes, allowing the flavors to meld.

Step 6

Remove the skillet from heat and mix in the chopped cilantro.

Step 7

Heat each tortilla lightly on a clean skillet or in the microwave to make them more pliable.

Step 8

Place a portion of the potato mixture onto each tortilla and top with slices of avocado.

Step 9

Fold the tortillas over the filling and serve warm.
